Keto Curried Chicken

This Keto Paleo Curried Chicken completely made me forget I was cutting out sugar.

The coconut curry ties all the ingredients together, while the pepitas give it a nice crunch, and the mild earthy blueberries give it the little sweetness that the dish requires, without breaking the Keto bank.

  1. Cook the diced chicken, diced zucchini, and diced peppers in 2-3 tablespoons of coconut oil until the pieces are fully cooked.
  2. Place the cooked pieces into a bowl and let cool for a few minutes.
  3. Add into the bowl the pumpkin seeds, blueberries.
  4. Mix in the coconut cream, curry powder, salt to taste, and chopped cilantro.
  5. Serve with lettuce leaves or enjoy by itself.
