Blueberry Banana & Coconut Pancakes
I would never have believed that Flour Free Pancakes could be so delicious! I would make these time and again, even if I wasn’t trying to avoid gluten!
- 3 bananas
- 100 g coconut flakes (finely shredded baking coconut is ideal, if you can find it)
- 3/4 cup blueberries (fresh or frozen)
- 1 tsp cinnamon
- coconut oil
- Mash the bananas with a fork, whip the eggs and mix with the bananas.
- Add coconut, blueberries and cinnamon and stir together.
- Fry the pancakes on both sides in coconut oil, on medium heat.
- Serve with coconut flakes, cinnamon and blueberries on top. Enjoy!
