Macadamia Nut Coconut Granola


This amazing Macadamia Nut Coconut Granola is delicious AND healthy. Packed with nuts and seeds, healthy fats, and iron, it’s gluten-free, refined sugar-free, and vegan. It’s delicious any time of the day. I like mine with plain yogurt and berries.

  1. Preheat oven to 300°F. Line a large baking sheet with parchment paper.
  2. In a large bowl, combine oats, chia seeds, flax seed meal, and macadamia nuts. In a small bowl, mix together remaining ingredients and stir until fully incorporated. Pour wet ingredients into dry ingredients and stir together until the dry ingredients are completely coated.
  3. Pour mixture onto a prepared pan and spread into an even layer. Bake for 30-40 minutes, stirring every fifteen minutes to ensure even cooking. Remove from oven. If you like chunky granola, press down on it when it gets out of the oven (wear a glove if it's still hot). Allow to cool. Store in an airtight container for up to a month.
