Try this delicious and healthy twist on sweet potato pie.
Mashed Sweet Potatoes (yams) with Goat Cheese and Rosemary.
- 2 sweet potatoes (yams)
- 2 oz goat cheese
- 1/2 cup greek yogurt + 2 tbsp for topping
- 2 tbsp sauteed, chopped rosemary (or substitute with dried rosemary)
- Wash sweet potatoes
- Place directly onto rack of oven, preheated to 350˚
- Bake until you smell the delicious aroma of the potatoes, and fork penetrates flesh easily.
- Add sweet potato flesh to food processor, discard skins
- Add the rest of the ingredients to the food processor
- Pulse until desired consistency is reached
- Serve with dollop of plain yogurt and sprig of rosemary formakes (4, 1/2 cup servings)
