This extremely tasty and healthy dish, is the version my husband finessed, after returning from Thailand. I hope you enjoy it as much as we do.
- 2 quarts chicken stock
- 1 - 2 whole stocks lemongrass split (careful of your fingers) and quartered
- 4 - 5 slices of dried galongal
- 3 dried, whole, red, chili peppers
- Juice of 1 lime
- 6 tbs fish sauce
- 4 kafir lime leaves
- 2 cloves garlic minced
- 1 1/2 Tbs brown sugar
- shrimps (fresh or frozen)
- Cremini or Shitake Mushrooms, quartered
- fresh Cilantro, chopped
- In a large pan, confine all of the ingredients, up to the "To Taste" items
- Bring to boil.... reduce heat and simmer for 30 minutes....
- add "To Taste" items, continue to cook for 2-3 minutes
Serve with sprig of fresh cilantro, and
red chili paste, as a condiment.
