Preheat oven to 300°F. Line a large baking sheet with parchment paper.
Combine oats, flax seeds, shaved coconut, and macadamia nuts in a large bowl. Whisk together the melted coconut oil, maple syrup, vanilla extract, and sea salt in a smaller bowl. Pour wet ingredients into dry ingredients and stir together until the dry ingredients are completely coated.
Spread the mixture evenly on the prepared baking sheet. Bake in the preheated oven for about 30-40 minutes. Stir the granola halfway through baking to ensure even browning and prevent the edges from burning. Remove from oven. If you like chunky granola, press down on it when it gets out of the oven (wear a glove if it's still hot).
Allow to cool. Store your coconut macadamia nut granola in an airtight container at room temperature. It should stay fresh for up to two weeks.
