chicken stock

whole stocks lemongrass
split (careful of your fingers) and quartered

slices
of dried galongal

dried, whole, red, chili peppers
Juice of 1 lime

fish sauce

kafir lime leaves

cloves
garlic
minced

brown sugar
To taste
shrimps
(fresh or frozen)
Cremini or Shitake Mushrooms,
quartered
fresh Cilantro,
chopped
Instructions
In a large pan, confine all of the ingredients, up to the "To Taste" items
Bring to boil.... reduce heat and simmer for 30 minutes....
add "To Taste" items, continue to cook for 2-3 minutes
Notes
Serve with sprig of fresh cilantro, and
red chili paste, as a condiment.
