Prepare the Nordic crab salad
In a small bowl, whisk together the mayonnaise, lemon juice, lemon zest, olive oil, chopped dill, shallot (if using), white pepper, and salt.
Fold the crab gently
Place the crab meat in a wide bowl. Spoon the dressing over the crab and gently fold just until coated, keeping the lumps intact. Taste and adjust seasoning.
Chill briefly
Refrigerate the crab salad for 15–20 minutes to allow the flavors to soften and meld.
Assemble
Arrange cucumber slices on a serving platter. Spoon a small mound of crab salad onto each cucumber round.
Finish with salmon
Top each bite with a folded piece of smoked salmon and garnish with a delicate sprig of fresh dill.
