These Nordic Crab & Smoked Salmon Cucumber Bites are a study in restraint and freshness.   • Prepare the Nordic crab salad
  • In a small bowl, whisk together the mayonnaise, lemon juice, lemon zest, olive oil, chopped dill, shallot (if using), white pepper, and salt.
  • Fold the crab gently
  • Place the crab meat in a wide bowl. Spoon the dressing over the crab and gently fold just until coated, keeping the lumps intact. Taste and adjust seasoning.
  • Chill briefly
  • Refrigerate the crab salad for 15–20 minutes to allow the flavors to soften and meld.
  • Assemble
  • Arrange cucumber slices on a serving platter. Spoon a small mound of crab salad onto each cucumber round.
  • Finish with salmon
  • Top each bite with a folded piece of smoked salmon and garnish with a delicate sprig of fresh dill.
