Mashed Sweet Potatoes (yams) with Goat Cheese and Rosemary

Instructions
 

  • Wash sweet potatoes
  • Place directly onto rack of oven, preheated to 350˚
  • Bake until you smell the delicious aroma of the potatoes, and fork penetrates flesh easily.
  • Add sweet potato flesh to food processor, discard skins
  • Add the rest of the ingredients to the food processor
  • Pulse until desired consistency is reached
  • Serve with dollop of plain yogurt and sprig of rosemary formakes (4, 1/2 cup servings)
