Light & Lovely Crustless Quiche with Turkey Bacon, Shallots & Mozzarella

Ingredients

strips cooked turkey bacon
chopped

scallions
sliced (white & green parts separated)

shredded mozzarella

cup
grated Parmesan

large eggs
1¾
cups
half-and-half
¼
teaspoon
nutmeg

teaspoon
salt
adjust to taste

teaspoon
freshly ground pepper
Tabasco sauce
to taste

tablespoon
flour

teaspoon
olive oil or butter
for sautéing
Instructions
Preheat oven to 350°F.
Grease a 9-inch pie dish well.
In a skillet, heat a little olive oil or butter.
Sauté white part of scallions
Cook until soft and fragrant (about 3–4 minutes). Remove from heat.
In a bowl, whisk together: Eggs, Half-and-half, Nutmeg, salt, pepper, Sriracha, and Flour
Layer into your prepared dish: Turkey bacon, sautéed scallions, Mozzarella, Parmesan,
Pour the egg mixture evenly over the top.
Sprinkle the green parts of the scallions over the top for a fresh finish.
Bake for 40–50 minutes, until: The center is just set (slight jiggle is okay) and top is lightly golden
Let rest 10–15 minutes before slicing (this is key for clean slices).
Notes
Finish with fresh chives or microgreens
Serve with simple greens + lemon vinaigrette
Or plate with sliced heirloom tomatoes for color
