Light & Lovely Crustless Quiche with Turkey Bacon, Shallots & Mozzarella

  • Preheat oven to 350°F.
  • Grease a 9-inch pie dish well.
  • In a skillet, heat a little olive oil or butter.
  • Sauté white part of scallions
  • Cook until soft and fragrant (about 3–4 minutes). Remove from heat.
  • In a bowl, whisk together: Eggs, Half-and-half, Nutmeg, salt, pepper, Sriracha, and Flour
  • Layer into your prepared dish: Turkey bacon, sautéed scallions, Mozzarella, Parmesan,
  • Pour the egg mixture evenly over the top.
  • Sprinkle the green parts of the scallions over the top for a fresh finish.
  • Bake for 40–50 minutes, until: The center is just set (slight jiggle is okay) and top is lightly golden
  • Let rest 10–15 minutes before slicing (this is key for clean slices).

Notes

Finish with fresh chives or microgreens
Serve with simple greens + lemon vinaigrette
Or plate with sliced heirloom tomatoes for color
