Instructions:

  • In a bowl, mix all the dry ingredients thoroughly.
  • Brush soy sauce onto the salmon cubes
  • Coat cubes thoroughly with the dry spice mix.
  • Let the salmon marinate with the rub for 15-30 minutes in the refrigerator for the flavors to meld.
  • Preheat your broiler and arrange the salmon cubes on a sheet pan with foil.
  • Broil for about 8-15 minutes, or until the salmon is cooked through and the exterior is slightly caramelized, keeping an eye on it to prevent burning.
  • Combine Mayonnaise and Sriracha to suit your taste.
  • Arrange salmon morsels on top of rice, and top with the Sriracha mayo, sesame seeds, and chopped scallions.
