Curried Baked Sweet Potato Chips

Delicious, satisfying, low calorie alternative to fried potato chips.

  • Preheat the oven to 375°F
  • With a mandoline, cut potato into very thin slices.
  • Spray 2 baking sheets with cooking spray. Arrange potato slices on the baking sheets in a single layer. Coat the slices lightly with cooking spray (or brush with canola oil).
  • Bake for 7 minutes, or until just starting to brown.
  • Turn the slices over and return to the oven. Bake until lightly browned, about 7 to 10 minutes.
  • Meanwhile, in a bowl combine the sugar, salt and spices.
  • Take the potato slices out of the oven and put in bowl with the spices.
  • Toss well before serving.
