Curried Baked Sweet Potato Chips
Ingredients
- 1 sweet potato 12 ounces
- 1/2 Tbsp cooking spray or canola oil
- 3 tsp curry powder
- 1 tsp ground cumin
- 1/4 tsp coconut sugar (it's low glycemic)
- 1/4 tsp salt
- dash ground cayenne pepper
- dash garlic powder
Instructions
- Preheat the oven to 375°F
- With a mandoline, cut potato into very thin slices.
- Spray 2 baking sheets with cooking spray. Arrange potato slices on the baking sheets in a single layer. Coat the slices lightly with cooking spray (or brush with canola oil).
- Bake for 7 minutes, or until just starting to brown.
- Turn the slices over and return to the oven. Bake until lightly browned, about 7 to 10 minutes.
- Meanwhile, in a bowl combine the sugar, salt and spices.
- Take the potato slices out of the oven and put in bowl with the spices.
- Toss well before serving.
