I love chia pudding!
I prep it at night (it takes only 5 minutes!), and wake up to a delicious superfood breakfast cold and ready to eat. I’ve shared my dragon fruit version here, but I encourage you to get creative and experiment with your favorite fruit and superfoods.
Dragon Fruit, Chia Seed Breakfast Parfait
Ingredients
- ¼ cup Chia Seeds
- 1½ cups coconut or almond milk
- 1 packet of frozen Pitaya smoothie www.pitayaplus.com
- 2 frozen bananas
- ½ cup coconut milk
Instructions
- Chia pudding layer:
- Combine chia seeds with coconut/almond milk. Stir vigorously. Let sit covered, in the refrigerator for 30 minutes or overnight (the longer you leave in the fridge, the more firm the pudding will become.)
- When ready to use, pour in a glass jar.
- Dragon Fruit layer: Put frozen pitaya and bananas in a blender. Blend until smooth.
- Add Dragon Fruit layer on top of Chia Pudding layer. Garnish with berries, nuts, cacao nibs. Use your imagination here. Enjoy immediately.
