Dragon Fruit, Chia Seed Breakfast Parfait

I love chia pudding!
I prep it at night (it takes only 5 minutes!), and wake up to a delicious superfood breakfast cold and ready to eat. I’ve shared my dragon fruit version here, but I encourage you to get creative and experiment with your favorite fruit and superfoods.

Chia pudding layer:
Combine chia seeds with coconut/almond milk. Stir vigorously. Let sit covered, in the refrigerator for 30 minutes or overnight (the longer you leave in the fridge, the more firm the pudding will become.)
When ready to use, pour in a glass jar.
Dragon Fruit layer: Put frozen pitaya and bananas in a blender. Blend until smooth.
Add Dragon Fruit layer on top of Chia Pudding layer. Garnish with berries, nuts, cacao nibs. Use your imagination here. Enjoy immediately.
