
These grain-free scones are moist and delicious, unlike traditional scones. They are perfect for an afternoon snack with a cup of tea. I don’t know about you, but I cannot eat grains every day or for every meal. Grains contain lechtins which are essentially the plant’s way of protecting itself from being over consumed. If eaten in high quantities, they make the stomach feel bloated and uncomfortable and can cause weigh gain. Lechtins are sometimes referred to as anti-nutrients, as studies have found that lectins can reduce the body’s ability to absorb nutrients. For that reason, I like to mix up my dishes between grain-free and grain-full. I use almond flour here, which is lechtin-free.

Grain-Free, Lemon, Lavendar, and Chamomile Scones
Ingredients
- 2 cups blanched almond flour
- ½ teaspoon baking soda
- 1 large organic egg
- ¼ cup honey
- ½ teaspoon organic vanilla extract
- 1 tablespoon lemon zest from an organic lemon
- 1–2 tea bags (or Tbsp ingredient) organic lavender & chamomile I use Traditional Medicinals Organic, Chamomile with Lavender, Tea Bags
Instructions
- Preheat oven to 350 F
- In a food processor, pulse together almond flour and baking soda (add lavender here if you don’t like the little specks)
- Pulse in egg, honey, and lemon zest
- Add tea bags, or lavender & chamomile, and pulse a few times to mix
- Transfer dough to a parchment paper lined baking sheet
- Form dough into a circle, 6 inches wide
- Cut dough like a pizza, into 8 slices
- Using a spatula move slices apart, leaving space in between
- Bake at 350° for 12-16 minutes until edges are browned
- Cool for 15 minutes.
