This Keto Paleo Curried Chicken completely made me forget I was cutting out sugar.
The coconut curry ties all the ingredients together, while the pepitas give it a nice crunch, and the mild earthy blueberries give it the little sweetness that the dish requires, without breaking the Keto bank.
Keto Curried Chicken
Ingredients
- 1 chicken breast chop into medium sized pieces, approx. 200g
- 1 red bell pepper chop into medium sized pieces, approx. 100g
- 1 small zucchini chop into medium sized pieces, approx. 50-70g
- 1 Tbsp. pumpkin seeds (pepitas, the inside of the pumpkin seed) approx. 5g
- 14 blueberries approx. 35g
- 1/4 cup coconut cream 60 ml
- 1 Tbsp. curry powder
- Salt to taste
- 2 Tbsp. cilantro finely chopped
- Coconut oil to cook with
- leaves Lettuce to serve with
Instructions
- Cook the diced chicken, diced zucchini, and diced peppers in 2-3 tablespoons of coconut oil until the pieces are fully cooked.
- Place the cooked pieces into a bowl and let cool for a few minutes.
- Add into the bowl the pumpkin seeds, blueberries.
- Mix in the coconut cream, curry powder, salt to taste, and chopped cilantro.
- Serve with lettuce leaves or enjoy by itself.
