Keto Curried Chicken


This Keto Paleo Curried Chicken completely made me forget I was cutting out sugar.

The coconut curry ties all the ingredients together, while the pepitas give it a nice crunch, and the mild earthy blueberries give it the little sweetness that the dish requires, without breaking the Keto bank.

  • Cook the diced chicken, diced zucchini, and diced peppers in 2-3 tablespoons of coconut oil until the pieces are fully cooked.
  • Place the cooked pieces into a bowl and let cool for a few minutes.
  • Add into the bowl the pumpkin seeds, blueberries.
  • Mix in the coconut cream, curry powder, salt to taste, and chopped cilantro.
  • Serve with lettuce leaves or enjoy by itself.
