Amazing Gingerbread

 

What is winter without gingerbread?

Ahhhh gingerbread….. Molasses and ginger in a moist, delicious bread. What could be better than sitting by the fire in a cozy, warm room while looking out the window watching the leaves fall or the snow dust everything white. Laughing at dogs trying to walk in snow shoes. It’s the perfect winter food.

I use blackstrap molasses. Blackstrap molasses is made from the third boiling of the sugar syrup.  It concentrates the nutrients but not the sugars – providing ounce-for-ounce more minerals than perhaps, any other food.  It’s full of manganese, copper, iron, calcium, and potassium – things that are hard to find in even the most nutritious diets.

Try my recipe below, topped with your favorite whipped cream, or vanilla ice cream, for the ultimate winter warmer…. (and it’s good for you, too… but don’t tell your kids that!)

  • Preheat your oven to 400 F
  • Whisk together the molasses, eggs, milk, vanilla and coconut oil.
  • In a separate large bowl, mix the almond flour, coconut flour, spices and baking soda.
  • Make a well in the middle of the dry mixture, and pour the wet mixture in. Stir until thoroughly combined and there are no lumps. Pour the mixture into a greased or parchment lined loaf tin (around 5x9 inches) Bake for 30-40 minutes, or until a toothpick inserted in the center of the loaf comes out clean. Let cool before slicing.
  • and bake for 30-40 minutes..... top with whipped cream or cream cheese frosting, for an ultimately satisfying winter treat!

  • INSTRUCTIONS
  • Sauce: Preheat the oven to 400 degrees and generously grease a 9x13 baking dish (seriously, be generous because it really really sticks to the sides). Bring the chicken broth and ½ cup milk to a low boil in a saucepan. Whisk the other ½ cup milk with the poultry seasoning and flour; add the mixture to the boiling liquid and whisk until a smooth creamy sauce forms.
  • Assembly: In a large bowl, mix the sauce from step one, one cup water, quinoa, and bacon and stir to combine. Pour the mixture into the prepared baking dish. Slice the chicken breasts into thin strips and lay the chicken breasts strips over the top of the quinoa mixture. Sprinkle with the seasoning. Bake uncovered for 30 minutes.
  • Broccoli: While the casserole is in the oven, place the broccoli in boiling water for 1 minute until it turns bright green and then run under cold water. Set aside.
  • Bake: Remove the casserole from the oven, check the mixture by stirring it around in the pan, and if needed, bake for an additional 10-15 minutes to get the right consistency. When the quinoa and chicken are cooked and the sauce is thickened, add the broccoli and a little bit of water (up to one cup) until the consistency is creamy and smooth and you can stir it up easily in the pan. Top with the cheese and bake for 5 minutes, or just long enough to melt the cheese.

Notes

NOTES You will know the quinoa is done when it is soft and looks as if it has popped open, with the germ of the kernel visible as a little spiral. I've gotten quite a few comments about the liquid not absorbing right away - if that's you, just bake it a little longer. With enough time, it should get that moisture soaked right up into a creamy sauce.

  • In a medium bowl, combine the tuna, cucumber, avocado, green onion, and sesame seeds. Pour in the lemon juice, sesame oil and soy sauce, and stir carefully to blend so as not to mash the avocado. Place this bowl into a larger bowl that has been filled with ice. Chill in the refrigerator for 15 minutes, but no longer - the terrific freshness of the fish will be lost.
  • Once chilled, remove the bowl from the ice, and spoon into martini glasses. Serve with organic, kettle cut, potato chips, or tortilla chips. I prefer to make my own chips, as the oil used is important. But if you don't have time to make your own, use organic. Fried potatoes should always be eaten organic, when possible.
