Pumpkin Spice Whipped Coffee

Pumpkin Spice Whipped Coffee
Instructions
- Add 2 Tbsp. instant coffee, 1 Tbsp. granulated sugar, ¼ tsp. pumpkin pie spice, and 2 Tbsp. hot water to a bowl.
- Whip the mixture 3 to 6 minutes with a mixer until it's pale and fluffy, similar to the stiff peak stage of whipping eggs. Or it is possible to do this by hand with a whisk, it will just take a while longer.
- After you've whipped your coffee, you can add 1 Tbsp. of canned pumpkin here (optional) for a more distinct pumpkin flavor and color. Blend in the puree just until combined so you don't lose the fluffiness.
- Fill a glass with your milk of choice. I use lactose free half & half. Gently spoon the whipped mixture on top. Admire your beautiful creation then give it a stir. Enjoy!

Grain-Free, Lemon, Lavendar, and Chamomile Scones

These grain-free scones are moist and delicious, unlike traditional scones. They are perfect for an afternoon snack with a cup of tea. I don’t know about you, but I cannot eat grains every day or for every meal. Grains contain lechtins which are essentially the plant’s way of protecting itself from being over consumed. If eaten in high quantities, they make the stomach feel bloated and uncomfortable and can cause weigh gain. Lechtins are sometimes referred to as anti-nutrients, as studies have found that lectins can reduce the body’s ability to absorb nutrients. For that reason, I like to mix up my dishes between grain-free and grain-full. I use almond flour here, which is lechtin-free.
